Chai Tea
Chai is basically black tea brewed with spices and milk. Masala Chai, an aromatic spiced tea, has been the Indian drink of choice for hundreds of years. It is the perfect blend of one part freshly ground spices like ginger, cinnamon, cardamom, nutmeg and cloves, added to three parts boiling water with loose leaf tea and milk to make a hot, delicious, satisfying beverage.

Make Your Own Chai Tea
14 cardamom pods
4 1/2 cups water
1 1/2 cups milk
2 tablespoons black tea leaves
3 (3-inch) sticks of cinnamon, broken into pieces
6 whole cloves
Sugar to taste
Makes 6 servings.

- Crush cardamom pods to expose seeds using the flat side of a large knife.
- Bring water, milk, cardamom pods, cinnamon and cloves to boil in saucepan. Reduce heat and simmer for 5 minutes, stirring occasionally.
- Add tea leaves and remove from heat. Cover and steep for 5 minutes.
Strain while hot. Sweeten with sugar as desired.
